Double Chocolate Chip Cookies:

Get ready to bake the ultimate indulgence—double chocolate chip cookies! These rich, soft, and chewy cookies are packed with not one, but two types of chocolates, perfect for chocolate lovers. They're amazing for satisfying your sweet tooth and are a breeze to make. Whether you're enjoying them fresh out of the oven or dunking them in milk, these cookies are a guaranteed crowd-pleaser.



Yields: (10-12 cookies)

 

Ingredients:

  • 10 tbsp unsalted butter

  • ⅔ cup brown sugar

  • ¼ cup white sugar

  • 1 large egg

  • 1 egg yolk

  • 1 tsp instant coffee

  • 1 cup all-purpose flour

  • ⅓ cup cocoa powder

  • ¾ tsp salt

  • 3/4 tsp baking powder

  • 8 oz chocolate, milk or semisweet

 

Steps:

  1. Place the butter in a non-stick pan and melt it on medium-low heat. Keep stirring for a few minutes until the butter starts to look brown and develops a nutty aroma.

  2. In a separate bowl add the brown sugar and the white sugar. Mix in the browned butter. Set aside and allow it to cool a little.

  3. Add the egg and yolk, and quickly whisk to incorporate. Add the vanilla and instant coffee and whisk for 1-2 minutes until the mixture becomes very smooth and creamy. Try not to have any lumps.

  4. Sift all the dry ingredients into the wet ingredients. Don't overmix. Add the chopped chocolate and mix everything together. You can reserve some chocolate to add on top of each cookie

  5. Use a 2-tablespoon cookie scoop to divide the dough into 10 balls. Place the cookie balls onto a baking sheet, and add a few chocolate chunks on top.

  6. Refrigerate for a minimum of 2 hours, but overnight for best results

  7. Pre-heat oven to 375F and bake for 10-12 minutes depending on how soft and gooey you want the cookies to be.

  8. Sprinkle the cookies with some flakey sea salt (optional) and let them cool down at room temperature for 5-10 minutes.
