Small Batch Molten Lava Cake:

Prepare to indulge in pure chocolate bliss with Molten Lava Cake! This luxurious dessert boasts a perfectly baked outer layer that gives way to a warm, gooey chocolate center. Each bite is rich, fudgy, and irresistibly decadent—an absolute dream for chocolate lovers. Whether enjoyed on its own, paired with a scoop of ice cream, or dusted with powdered sugar, this dessert is a guaranteed showstopper. Plus, it’s surprisingly simple to make, so you can satisfy your chocolate cravings anytime! 🍫✨



Yields: ( 3 cakes )

 

Ingredients:

  • 1 cup semi-sweet or dark chocolate chips

  • 1/2 cup butter

  • 6 tbsp powdered sugar (this just makes sure the lava isn't grainy, you can also use regular sugar if you don't have powdered sugar on hand.)

  • 1/4 cup all-purpose flour

  • 1/8 tsp salt

  • 2 eggs, at room temperature

  • 2 egg yolks, at room temperature

  • Vanilla ice cream, for topping

  • Chocolate syrup, for topping

 

Steps:

  1. Preheat the oven to 425F. Grease three ramekins and dust each well with cocoa powder. Set aside.

  2. Add the butter to a saucepan over medium-high heat. Allow to melt and slightly brown, while stirring continuously. Remove from the heat and cool slightly.

  3. Then, add in the chocolate chips and mix until the chocolate chips have fully melted into the butter and the mixture is smooth. Set aside.

  4. In a large bowl, whisk together the eggs and egg yolks. Add in the sugar, flour, and salt. Whisk until well combined.

  5. Then as you continuously whisk, stream in the melted chocolate and butter mixture. Continue whisking until everything is combined and the batter is smooth.

  6. Spoon or scoop the batter into the prepared ramekins, filling each 3/4 of the way full.

  7. Bake at 425F for 12-15 minutes, until the edges are set and firm, but the center is still slightly jiggly. DO NOT OVERCOOK! Remove from the oven and let stand for a few minutes in the pan.

  8. Then, run a knife along the edges of each lava cake, and quickly invert the pan onto a serving plate.

  9. Transfer to plates and serve immediately with a scoop of vanilla ice cream and a drizzle of chocolate syrup.
