Yields: (12 cupcakes)
Ingredients:
Cake:
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 teaspoon salt
2 large eggs
1 cup coffee and milk
1/2 cup oil
Frosting:
2 cup confectioners
1 cup butter
6 - 8 oz melted chocolate
Steps:
Preheat your oven to 350 F. Prepare a cupcake tin.
Then, in a bowl, whisk all the dry ingredients together. Then, in a separate bowl, mix all the wet ingredients. Combine the two mixtures and pour them into the prepared tin. Bake for 27-32 minutes. Melt the chocolate. Set aside to cool. Beat the butter and confectioners together. Then add the cooled chocolate. Mix until creamy and smooth. Ice the cupcakes. Enjoy!
