aka me attempting to pipe for the first time with shaky hands and way too much frosting in the bowl
So here’s what happened: I was peacefully scrolling Pinterest, minding my own business, when I came across one of those cute vintage heart cakes. You know the, over-the-top borders, bows, and super aesthetic colors? Yeah. My brain immediately went: “I can totally do that.” Spoiler: it was not that simple.
This was Day 1 of me trying to learn how to pipe at home, by myself, with no piping experience. It was messy, chaotic, and SO fun. I ended up making a Nutella chocolate cake with Swiss Meringue Buttercream and spent half the time just figuring out how to hold a piping bag without it exploding.
Here’s the full recipe I used ↓ ✨✨

Yields: ( 12-15 slices )
Ingredients:
Cake:
2 cup all purpose flour
1.5 cup sugar
2/3 cup cocoa powder
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs
2/3 cup vegetable oil
1 cup whole milk
1/2 cup chocolate malt powder
2 tsp instant coffee
1/2 cup boiling water
1/2 cup sour cream
Nutella Swiss Meringue Frosting:
5 egg whites
1 and 3/4 cup butter
1 cup sugar
30 grams melted dark chocolate (70%)
1/4 tsp cream of tarter
3/4 cup nutella
optional: brown food coloring
NOTE: this is the full recipe in the video I halved this recipe so feel free to do that.
Steps:
Pre-heat oven to 350 F and prepare 2 8" (or two 6 in ones for the halved recipie) cake pans with parchment paper and butter.
Add the flour, sugar, baking powder, baking soda and salt to the bowl of your stand mixer and whisk together.
Add the chocolate malt and milk in a cup and mix. Add that to the dry ingrediants with the oil, and the eggs. Whisk.
Then in a separate cup mix the water and the coffee. Add it in. Mix then fold in the sour cream.
Bake for 30 minutes the torte it and let it cool.
For the frosting in a heatproof bowl whisk your egg whites, sugar and cream of tarter till combined.
Then put the egg white mixture on a double boiler and whisking until it reaches 150 F.
Once it has reached 150 F remove it from the double boiler and put it into the bowl of your stand mixer. Whisk for 8 minutes until it reaches almost stiff peaks. The bowl should not be warm at this point. If it is warm continue whisking, until the bowl of your mixer is cool to touch.
Then add the butter in piece by piece. It may look curdled at first but keep mixing. It will smoothen out eventually.
Then add in Nutella and dark chocolate to the whole thing and mix until combined.
Once that is done separate out a third of the frosting and make it a darker brown color. Add in more Nutella, coca powder, or coloring as long as it becomes darker its good.
Once that is done start stacking and crumb coating with the light brown frosting. Decorate however you like.
ENJOYY!!!
