Deep Dish Spicy Chipotle Chicken Pizza

Whether you’re feeding a crowd or just treating yourself to a bold homemade pizza night, this recipe is guaranteed to spice things up.

Yields: ( 12-15 slices )


Ingredients:

Pizza Dough:

  • 2 ½ cup all-purpose flour (325g)

  • ¾ cup warm water (180g) + more if needed; ideally around 110F

  • 1 ½ tsp instant yeast

  • 2 tsp sugar

  • 1 tsp salt

Chicken:

  • 1 tbsp olive oil

  • ½ pound boneless chicken tenders (225g)

  • 1 tbsp olive oil + more for cooking

  • ½ tbsp honey

  • 3 tbsp Adobo sauce (from a 7oz can of chipotle peppers in adobo sauce)

  • 1 tsp salt (or to taste)

  • ½ tsp garlic powder

  • ½ tsp chili powder

  • ½ tsp paprika

  • ½ tsp chili flakes

  • ¼ tsp pepper

  • ½ tsp oregano

  • ¼ tsp coriander

  • ¼ tsp cumin 

Chipotle Pizza Sauce:

  • 2 chipotle peppers (from can of chipotle peppers in adobo sauce)

  • ¾ cup mayo

  • ½ tsp salt

  • 1 tsp garlic powder

  • ½ tsp pepper

  • ½ tbsp lemon juice

  • 2 tbsp honey

Assembly:

  • 3 cups shredded cheese

  • 2 tbsp sliced green olives

  • ½ tomato, diced

  • 1 small jalapeno, thinly sliced

  • ½ bell pepper, thinly sliced

  • 1/4 onion sliced

Steps:

  1. Add all the ingredients for the pizza dough in a large bowl. Use a large spoon to bring together the ingredients in a loose, rough dough. Knead in a machine or by hand.

  2. Place the dough in a clean bowl brushed with oil, and cover with cling wrap. Place in a warm place for 60-90 minutes until it doubles in size. While the dough is rising, work on the chicken and sauce below.

  3. Add the chicken tenders, olive oil, honey, adobo sauce and all the seasonings to a bowl. Mix thoroughly to fully coat the chicken on all sides. Rest for 30 minutes.

  4. Once marinated, cook the chicken on medium-high heat on the stove in a small amount of oil until it is slightly charred on the surface and cooked inside. This should take ~3-5 minutes per side depending on the thickness - avoid overcooking! Once donee cut into thin strips.

  5. For the sauce add everything to a blender or food processor, and blend until a smooth creamy sauce forms. Taste and adjust if needed.

  6. Pre-heat the oven at 500F, and chop the veggies . Once the dough has risen, it's time to assemble!

  7. Brush oil onto a 9x13" sheet pan. Roll the dough into a rectangle of the same size and transfer to the pan. Do not use all the dough if it feels like it has risen too much.

  8. Spread on a generous layer of the chipotle sauce

  9. Spread on the shredded cheese, taking it all the way to the edges. Then spread the sliced chicken and vegetables

  10. Bake at 500F for 12-13 minutes until the pizza looks golden on the edges and the cheese has fully melted

  11. Serve the pizza hot with a drizzle of any remaining chipotle sauce and red crushed peppers.
