Berry Chantilly Cake:

This cake is literally the PERFECT summer dessert. Summer is for light airy deserts and this is exactly that. Its a light and airy vanilla cake soaked with a strawberry jam syrup, topped with fresh heavy whipped cream and loaded with fresh blackberries strawberries and blueberries. Its perfect for a party, and out door BBQ, or a beach day!!! Let's get baking. ✨✨

Yields: ( 10 - 12 slices )


Ingredients:

Cake:

  • 2 ⅔ cups all pupose flour

  • 1 ½ cup granulated sugar

  • 2.5 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 14 tbsp unsalted butter softened

  • 1 cup milk

  • ⅓ cup vegetable oil

  • 3 large eggs, room temp

  • 2 tsp vanilla bean paste or extract

Berry simple syrup:

  • ¼ cup water

  • ¼ cup granulated sugar

  • 2 tbsp of strawberry jam

Whipped Cream frosting:

  • 2 cups cold heavy cream or heavy whipping cream

  • 1/3 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 2 cups fresh mixed berries

  • optional: dusting of powdered sugar

Steps:

  1. Pre-heat oven to 335F (conventional) and prepare 3 8" cake pans with parchment paper and butter.

  2. Add the flour (sifted), sugar, baking powder, baking soda and salt to the bowl of your stand mixer and mix together. Add the butter. Whisk on medium speed for ~1-2 minutes until the mixture is crumbly

  3. Separately, whisk together the eggs, buttermilk, oil, vanilla and almond extract until the eggs are broken down

  4. Add a third of the wet ingredients to the dry ingredients and whisk on medium speed until combined. Scrape the bowl, and add the remaining wet ingredients. Whisk on medium speed until combined. Scrape the bowl again. Now increase the speed to medium-high and whisk for 2 minutes. You should have a light and fluffy cake batter

  5. Divide the batter evenly between the cake pans and bake for ~28-30 minutes until the cakes are light golden and a toothpick inserted in the middle comes out with a few moist crumbs attached.

  6. Let the cakes cool.

  7. For the syrup add the water, sugar and jam to a saucepan and mix. Heat on low flame until the mixture starts to simmer and sugar has dissolved. This should not be a thick syrup. Set aside to cool down.

  8. Using a hand mixer or a stand mixer fitted with a whisk attachment, whip the heavy cream, powdered sugar, and vanilla extract on medium-high speed until medium peaks form, about 3-4 minutes.

  9. Place 1 cake layer on your cake stand. brush with the syrup. Evenly spread around 1 cup of whipped cream on top. Then, arrange a single layer of mixed berries on top. Repeat with the next two layers. Add a dusting of powdered sugar on the berries of the last layer.
